Cheesy Chicken Bites




Recipe

Bread Required ..........................................Cut into roundels..u can make it small or big its upon ur choice..
Chicken Masala Filling................................(ths cheese work more taste with chicken :)place it one side..
Spreadable Cream Cheese..........................Required (spread it one side of the bread &press tightly..
Egg Whites..................................................For dipping
Bread Crumbs.............................................For Rolling
Oil...............................................................For Frying (u can deep fry or shallow fry..while u deep frying make sure dat the oil must be make hot before u frying it....otherwise the bread will absorb too much oil..

Zucchini Fritters

ZUCCHINI PAKODAS

INGREDIENTS:-
Zucchini................................................................1 large (sliced length wise)
Chili flakes.............................................................1 tsp
Green chili sauce.....................................................1 tsp
Ginger.....................................................................1 tbsp (grated)
Garlic.......................................................................4 cloves (chopped)
Coriander seeds.......................................................1 tbsp (crushed)
Coriander leaves.......................................................1 tbsp chopped
Cornflour..................................................................2 tbsp
All-purpose flour....................................................... 1/2 cup
Gram flour..................................................................1/4 cup
Turmeric.....................................................................1/2 tsp
Salt............................................................................ as per taste
Water.........................................................................1/2 cup
Oil for frying

METHOD:-

Apply some salt to zucchini and leave it for 10 minutes

Pat dry the zucchini slices with the paper towel or tea towel and keep it aside

In a bowl, mix all ingredients well to form lump free and medium pouring consistency batter. If batter is too thick add little water at a time to form batter

Add zucchini in the batter, mix and leave it marinated for 15 minutes

Heat oil in kadai or deep bottom pan, and fry the marinated zucchini slices till golden brown

Drain on paper towel to remove excess oil

Serve hot with green chutney or any chutney of your choice

Chicken Spring Roll




For the filling
1. Chicken (cooked adding 1 tsp pepper powder, ½ tsp chili powder, enough salt and about 1 ½ - 2 cup of water and shredded) – 1 cup
2. Onion – 2, medium (finely sliced)
3. Green chili – 3 , chopped finely
4. Crushed ginger garlic – 1 ½ tsp
5. Carrot – 1, finely sliced
6. Capsicum – 1/2 , cut to small pieces
7. Pepper pwd – ½ - 1 tsp (according to taste)
8. Soy sauce – ¾ tsp
9. Salt – to taste
10. Oil – 2 tbsp
1. Heat oil in a pan, add sliced onion, green chili and salt and saute till soft on medium heat. To this add crushed ginger garlic and saute till the raw smell disappears.
2. Add carrot and capsicum to this and saute , reduce the flame and saute for another 3 – 4 minutes. Now add pepper powder and soy sauce and saute for 2 minutes. Add shredded chicken to this and combine well. Cook it for another 4 – 5 minutes on low flame and remove from fire. Keep it aside (filling courtesy from sanas recipe book )

Batter for making pancake (Made little changes from ma side n making pancake)
1. All purpose flour – 2 cup
2. Water – 1cup +milk 1/2  (to make a smooth and thin batter)
3. Egg – 1 + 2 egg yolks (only egg whites will be used for dipping the spring rolls…instead of throwing it out, add it to the batter)
4. Salt – to taste
5  Cornflour 2 tbs

1. Mix together the above ingredients to make a smooth batter adding enough water. Whisk till smooth.
2. Heat a small non – stick pan, pour very little batter to it and spread evenly in the pan to get circle shape. Remove the pancake from the pan when just done. Repeat the process till all the pancakes are done. .
3. Take a pancake, put little filling to it and fold it(as shown in the pic). . Repeat the process till all of them are done.
For dipping, coating and frying
1. Egg whites – 2 (lightly beaten)
2. Bread crumbs – as required for coating
3. Oil – for deep frying
1. Dip the prepared rolls in the egg whites and then roll it in the bread crumbs till well coated.
2. Heat oil in a deep pan and fry the rolls on medium heat till golden brown. Serve hot with any sauce of your choice.

B,M, Chicken Nest (Biriyani Masala)

Biriyani Masala Chicken Nest


 Marinate

Chicken 1/2 kg  (Make it chili pieces)
Ginger Garlic Paste 2 tbs
Soya Sauce 1/2 tbs
Lemon Juice 1/2 tsp
Red Chili Powder 1 tbs
Salt
Corn flour 2 tbs
Marinated for 1/2 hour &deep fry in the oil..


Biriyani Masala..

onion [medium] 4
ginger garlic paste 3 tbs (crushed is more better)
green chili 6
tomato 2 big
coriander leaves 1 handful
mint leaves same
garam masala 1/2 tbs
turmeric powder 1/3 tbs
coriander powder 1/2
 tbs

lemon juice 1 tsp
Cinnamon Stick 1
Ghee or oil 

Wok with oil &cinnamon stick add onion saute it...(medium saute is preferable)
Add rest of the ingredients one by one...
Add powders &Make it dry
Now add 13 ..14..Bread Crumbs.
Just mix it with biriyani masala..Don,t be over mix...When u overmix the bread crumbs the masala  will be sticky..it will affected the taste too..


Remove the cinnamon sticks &Big pieces of tomatoes ..

Take a genarous amount of masala in ur palm..
Now place the fried chicken
Cover it Gently...Different size of the chicken pieces will be make a slight different n the size of the nest...
See without any holes..
Must cover all the parts properly..otherwise it will open while frying...

Egg whites 
Bread crumbs 

Dip the Chicken nest in egg whites and then roll it in the bread crumbs...Slowly put it into the hot oil..&deep fry it..Have with tomato ketchup..

Mocha Pudding

Ingredients

Mascarpone cheese 100g
Fresh cream 100g
Dark Chocolate cake 3 pieces
Sugar 3 tbs..(increase or decrease)
Thick coffee 1/3 cup
Chocolate sauce (optional)

Beat the Mascarpone cheese ..ln this add the fresh cream and beat it until fluffy.....Now add the coffee and require amount of sugar.Mix it well &.keep it aside.Now take a pudding glass or bowl ,,in the bottom spread the cake peaces.Spoon mocha cream above it..Again With crumbed cakes & cream..Lastly spread chocolate sauce on the top.. .
Cover the surface of the pudding with plastic wrap; chill. Sprinkle each of the servings with 1 teaspoon dark &white chocolate shavings.
